Who didn’t get over the moon excited about this post today?!!?! I love ice cream, sandwiches and breakfast. What’s better than to combine all three?! You got it, ice cream sandwiches that are breakfast approved.
Below are some fun and super easy ways to make yourself a yummy breakfast sandwich with a twist. Now, I don’t necessarily recommend eating one of these bad boys every morning for breakfast…. I do however think every here and there wouldn’t hurt 😉
::5 Â Ice Cream Sandwiches for Breakfast::
- PB&J Waffle Ice Cream SandwichÂ
Mmmmm, yum yum yum! This takes the classic breakfast staple, waffles, and throws in some yummy pb&j and of course ice cream! My mouth is salivating … To make you will need two frozen waffles. Layer one side with pb and the other with your choice of jelly. Then take a scoop of vanilla ice cream (or whichever you choose) and then freeze for two hours. Your yumminess now awaits.
2. Mocha Ice Cream Sandwich
This delectable sandwich is going to offer you your daily morning Joe and pancakes, an all-time breakfast favorite! To create this ice cream sandwich you are going to make cocoa pancakes, get a 1/2 scoop of softened coffee ice cream, and plop the scoop between the two cocoa pancakes. If you have a love for sprinkles, you can add those too. To finish this off, you pop your sandwich into the freezer for 2 hours and *VOILA*
3. Frozen Oat and Blueberry Greek Yogurt Sandwiches
Frozen Oat and Blueberry Greek Yogurt Sandwiches are a fun and refreshing morning breakfast option. Instead of ice cream, fill 8 packaged oat breakfast biscuits with frozen Greek yogurt and whipped topping. To make the Greek yogurt filling for each of your sandwiches, mix 1 container (5.3 oz) of blueberry Greek Yogurt and 1/2 cup of Reddi-wip®. Evenly spread your yogurt mixture onto a packaged oat breakfast biscuit. Top Greek yogurt mixture with a second oat breakfast biscuit. Freeze for 2 hours and indulge!
4. Frozen Cinnamon Raisin SandwichÂ
Instead of filling two slices of cinnamon raisin bread with ice cream, fill this delight with a rich and creamy pudding mixture. To make the filling for this Frozen Cinnamon Raisin Sandwich, mix together 1 vanilla pudding cup (3.25 oz), 1/2 cup of Reddi-Wip, 1 TBSP chopped walnuts, and 1/8 TSP of ground cinnamon.  Evenly spread your pudding mixture between two slices of cinnamon raisin bread. Freeze your sandwich for 2 hours and you’re ready to enjoy!
5. Banana Bread Ice Cream SandwichÂ
Take two thin slices of homemade honey-sweetened banana nut bread. *If you’re like me and the thought of having to make it from scratch is making you itch, then you can buy it too*Â Place a scoop of chocolate chip or vanilla ice cream on one slice of banana nut bread. Top your ice cream with the second slice of banana nut bread and freeze.
That’s a lot of yumminess to make your mornings a little brighter and sweeter! As mentioned, I think these goodies are best for here and there and not every morning. You could be looking at bigger issues then 😉
